Hi M, we never had too much of an issue with peppers making the broth bitter, people also say the same about broccoli stems which we haven’t really found to be true. With that being said, if you used these ingredients in moderation and you should still end up with a tasty and well-balanced broth. One ingredient that will turn your broth bitter is onion peels so definitely avoid those, glad to hear you enjoyed your broth and it all came together once you used it in your soup!

I used my scrap broth in a chickpea soup today and it came out sooo hearty and delicious! While I was cooking the stock yesterday it didn’t taste as complex and flavourful on its own so I was a bit worried about how it’d go, but today with all the other ingredients of the soup it really sung.

I read in other guides to avoid using capsicum/bell peppers because they come out bitter, but I can see a few in your pictures. Do you have any issues in using them? I’d love to include them too because it feels quite wasteful not to!

I have done this. I love to make many different home made soups and the use of this broth even mixed with store bought chicken broth in recipes adds a wonderful savory flavor. I freeze in pint jars with plenty of head space for expansion. Also I freeze some in an ice cube tray for smaller uses of broth. I highly recommend giving this a try. It is also great for those with dietary restrictions. You know what is in this broth.

Two tips: after broth has been strained, wipe out your pot & return broth. Reduce it to at least 1/4 its original volume. Freeze in 1c portions. Reconstitute it when you use it by adding 1-3c water – more or less, depending on its original concentration and how strong you want it for your current purpose. It takes up far less room this way. If you do this frequently or in large enough batches, you’ll find investing in portioned freezer molds with lids to be useful.
